How it works
(Cuban Red Bean Stew)
Place the red beans in a large pot and add enough water to cover them. Let them soak for 1-2 hours.
Add 3 cups water, Spanish chorizo or ham and cook without the lid until smooth.
Prepare a Sofrito: onion, green pepper and garlic and tomato sauce.
Add the sofrito to the beans along with cumin, oregano and salt. Also add potatoes or pumpkin and cook until all is mixed.
Serves as soup or with white rice (arroz blanco). Enjoy!
